Veal Chops with Tomato-Pepper Relish

Total preparation and cooking time: 30 minutes

4 veal rib or loin chops, cut 1 inch thick (approx. 8 ounces each)

Salt

Tomato-Pepper Relish:

1 tablespoon olive oil

2 cloves garlic, crushed

1 can (14-1/2 to 16 ounces) Italian-style diced tomatoes, undrained

1 jar (7 ounces) roasted red peppers, rinsed, drained, chopped

1/4 teaspoon crushed red pepper

1 tablespoon balsamic vinegar

1. In medium saucepan, heat oil over medium heat until hot.

Add garlic; cook and stir 2 minutes.

Stir in tomatoes, roasted peppers and red pepper.

Simmer 12 to 15 minutes or until slightly thickened, stirring occasionally.

2. Meanwhile heat large nonstick skillet over medium heat until hot.

Place veal chops in skillet; cook 12 to 14 minutes for medium doneness, turning once. Season with salt, as desired.

3. Stir vinegar into relish; serve with veal.

Makes 4 servings (serving size: 1/4 of recipe).
